Tap Into Knowledge: Wet Hopping Ingredients & Brewing Processes
This panel will discuss the different processes and ingredient selections required to make a wet hop beer. Because a wet hop beer requires very fresh "wet" hops, the ordering and delivery are very different from regular hop used in the brewing process. Many brewers have also had to come up with creative ways to deal with the large volume of wet hops used particularly for brew houses not designed for use of whole cone hops being used.

Bill Lindsay Co-Founder and Head Brewer, Thunderhawk Alements Head brewer and Co-owner of Thunderhawk Alements in Miramar, which opened September 2016. Homebrewer for 8 years before opening Thunderhawk. Won a bronze for their Honey Ginger Saison with Torrey Pines needles at NY International Beer Competition in 2018. |

Tom Nickel Owner, Nickel Beer Company, O'Brien's Pub and West Coast Barbecue and Brew Tom has been a part of the San Diego beer scene since getting hired at Home Brew Mart in 1995. He went on to work at Pizza Port, Stuft Pizza/Oggi's Pizza and Left Coast Brewing Company. Tom has owned O'Brien's since 2003. In 2013 Nickel Beer Company was opened in Julian. Along with Chad Stevens, he founded the San Diego International Beer Festival in 2008. Outside of beer, Tom enjoys soccer and metal music. |

Matt Palmer Head Brewer - Ocean Beach, Pizza Port Brewing Co. As a native San Diegan, Matt had an early introduction to San Diego craft beer and the art of home brewing. In 2013, he left a job in finance and began his professional brewing career at the original Pizza Port location in Solana Beach as an assistant to renowned Head Brewer, Devon Randall. Matt spent two years under Devon's tutelage before joining the production team at Pizza Port Bressi Ranch where he worked his way up the ranks. In February 2016, Matt became Head Brewer of Pizza Port's Ocean Beach location where he has artistic license to concoct fun and exciting new beers on a 15bbl brewpub system. He brought home his first GABF medal in 2017 and continues to be recognized in regional and national competitions. He is a certified BJCP judge and an active member of the local beer community through competitions, collaborations and sharing with others his passion for independent beer. |

Jeff Wiederkehr Co-Founder & Head Brewer, Burning Beard Brewing Co. Jeff is a lover of music, books, and ideas. He is a lifelong student with degrees in Science, Social Science, a Masters Degree in English Literature, and he is ABD Ph.D. In 2015, he won Quaff Home Brewer of the Year (meow). He is also a recognized BJCP judge and level two certified Cicerone.
